If You Like Sweet Potatoes…
…oh MY…have I got a treat for you today!
My mom brought these sweet potatoes to Thanksgiving dinner…we had leftovers and I ate them every day after Thanksgiving until they were gone…I just went nuts over these sweet potatoes for some reason. I finally asked her for the recipe and she just gave it to me a few days ago…it turns out there is a special spice that gives these potatoes their special flare. But fear not! I have a source for you to get this spice as well! I am telling you that if you like sweet potatoes, you should seriously consider ordering this spice to try this recipe.
It.is.just…DA BOMB!
So, without further delay:
Mashed Sweet Potatoes
* 2 lbs. sweet potatoes (2-3 large)
* 1/2 Cup maple syrup
* 1 tsp. SWEET CURRY POWDER
* 1/2 tsp. GARAM MASALA
* 1/2 tsp. salt
* 1/2 Cup chopped pecans
Put a pot of water on to boil. Peel the sweet potatoes and cut into chunks. Boil the sweet potatoes until tender, about 20 minutes. Drain and set aside. In a small saucepan, heat the maple syrup, SWEET CURRY POWDER, GARAM MASALA and salt. Simmer for 1-2 minutes. Mash the sweet potatoes. Add the syrup and mix well. Sprinkle with the pecans and serve.
Prep. time: 5 minutes
Cooking time: 25 minutes
Serves: 4-6 as a side dish
OK – you’re going to need to get you some Sweet Curry and some Garam Marsala. Here’s where to find it:
Garam Masala: a salt free, all-pupose blend called for in many Indian dishes
Sweet Curry Powder: a salt free, good starter curry powder with great flavor and little heat
Their prices are reasonable and I’m telling you once you have these spices in your house…and others, too (I’m going to have to check out their online store myself and find some neat spices to try)…just think what kind of cooking you will be doing!
Try these sweet potatoes, though! They are sooooooooooo yum!
