Entering a Cook off
I’ve never entered a Cook off before, but I think I could hold my own. I like to prepare simple yet tasty (and healthy) foods for my family and I suspect that some of my recipes might be contenders.
We love to grill during the summer months. In fact, my grill is going several nights a week and I am always looking for new recipes. We do tend to fall back on our favorites, though. One such favorite is :
Ingredients:
* 1 lb Salmon fillet and skinned
* 3 tbsp honey
* 3 tbsp lemon juice
* coarse ground black pepper
* 4oz mixed salad leaves
* 4oz trimmed French green beans, blanched
Dressing
* 2 tsp Wholegrain mustard
* 4 tbsp virgin olive oil
* 2 tsp honey
* 2 tbsp lemon juice
Instructions:
Heat your grill to a high heat. Mix the honey, lemon juice and pepper together and brush on both sides of the salmon.
Cook for 3 – 4 minutes on each side or until browned and cooked to your liking. Set aside.
Mix all the dressing ingredients together.
Serving:
Divide the salad leaves and green beans between 4 serving plates. Break the salmon into large flakes and arrange on top of the salad. Spoon over the dressing.
Doesn’t this sound good? It is one dish that my whole family really enjoys. Entering a cook off sounds like a lot of fun and also a great way to find a lot more really good recipes to add to my collection. The more I think about it, the more exciting it sounds to enter a cook off. Winning would be pretty cool, too! One other additional benefit is the positiveness of domestic seafood sustainability. Anything we can do to promote and sustain domestic seafood is a good thing.
